Yaniqueques recipe [Johnny Cakes]

An appetiser and the Dominican version of Johnny cakes. Often sold by street vendor`s.

Ingredients

  * * 2 cups of flour

  * * 1 tablespoon of baking soda

  * * 3 tablespoons of cold water

  * * Salt

Directions

Combine the baking soda with the water.

Pour over the flour and mix well by hand to obtain dough that is elastic and shining.

Extend the dough to make a thin layer, cut in circles.

Perforate in the centre with a fork and fry in hot oil until golden.

Set on paper towels for a minute before serving.

Serve warm.
