* 8 Cups Water
* 3 Seasoned Chicken thighs with chicken-based seasoning (eg Oxo cube etc).
* 3 Garlic Cloves.
* 2 Bay Leaves
* 1 Teaspoon of salt.
* 3 Cans of drained red (chilli) beans.
* 2 tablespoons lemon juice.
* 11/4 Teaspoons Cumin.
* 1 Teaspoon sugar.
* 1 Teaspoon hot (eg tabasco) sauce.
* 1/4 Cup Olive Oil.
* 1 Chopped red pepper.
* 1 Chopped green pepper.
* 1 Chopped onion.
Sopa de pollo con habichuelas recipe.
This is a traditional Dominican soup recipe, particularly popular in the north of the country near Puerto Plata, Cabarete, Sosua etc.
Boil the water with the chicken, garlic, bay leaves and salt for 35 minutes, then let it cool so that the chicken can be cut off the bones and cut into pieces.
Discard the bones. Add to the broth the chicken, the beans, the lemon juice, cumin, sugar and hot sauce.
Let it boil for 15 minutes more or until it slightly thickens. Check the salt. In a separate pan fry lightly in olive oil the peppers and onions, add everything to the broth. You may accompany it with chopped, fried mexican tortillas.
