Tie the Okra firmly in order to prevent water entering them when they are boiled, and so that they can form their peculiar shape when heated.

This dish is typical of the North of Dominican Republic. When a lady dresses in very tight fitting clothes they say up there: "here comes an okra"! Here is a an easy and quick version. Do it in different sizes according to your needs. Large for a quick lunch, small to serve as a canape.

Ingredients:

  * 1 cup of Cornflour (medium grain)
  * 1 tablespoon of sugar
  * 2 cups of low-fat room temperature chicken broth.
  * 16 leaves of corn
  * 1 teaspoon finely chopped parsley
  * 1 teaspoon finely chopped basil
  * half pound of minced beef
  * 1 tablespoon of tomato paste
  * 1 teaspoon of salt
  * 1 small onion cut in cubes
  * 1 sweet pepper
  * half a tablespoon of ketchup
  * 1 teaspoon of Tabasco sauce
  * Black pepper in powder
  * String* to tie the Ham
  * Salt

Preparation:

Heat the oil in a casserole dish. Add the ground beef and stir until evenly boiled. Add two spoons of water, the pepper, oregano, onion, the sweet pepper, basil, a pinch of salt and tomato paste. Allow to simmer, adjusting the water as necessary. When the beef is ready let almost all the moisture evaporate and adjust the salt to taste. Turn off the heat and let it stand.

In a saucepan mix the corn flour, the sugar and the low-fat chicken broth. Let it simmer and stir constantly, avoiding it sticking to the saucepan. When it gets to boiling point turn down the heat and continue stirring until it converts into a consistent dough-like mixture.

Spread the oil onto your hands. Take a tablespoon of cornflour in the palm of your hands and make a disc, let it stand. Repeat it, put half a tablespoon of beef on the disc, and cover with the one set aside. Seal and make it into the shape of a flattened roll. Wrap it in the corn leaves or wax paper and tie it. Let it stand. Repeat the same process with the rest of the dough.

Fill up a pot with water and boil it. Put the okra in the water for five minutes. Take the corn leaves off before serving. Serve hot with ketchup and Tabasco sauce.
