* 1/2 cup of couscous.
* 1 cup of hot water.
* 1/4 teaspoon of salt (add more if needed)
* 1/4 cup olive oil.
* 1/4 cup of bitter lemon
* 1/4 teaspoon of salt
* 1/4 teaspoon of pepper.
* 1 + 1/2 cup of cut parsley.
* 1/2 cup of chopped mint.
* 1/2 cup of chopped chives.
* 1/3 cup of chopped white onion.
* 1 cup of cubed tomatoes.

Put the couscous with the salt and water in a big bowl. Leave to stand for 10 minutes, then take the excess water out and put the couscous in the refrigerator for 1 hour.
In another bowl mix the olive oil with the lemon, salt and pepper, put the couscous mixture in and mix it well. Then add the remaining ingredients in order, mixing well. Put in the refrigerator with a cloth on top to cover it until ou want to serve it.
Preparation time: 25 minutes.
Serves: 6 to 8.
