Bizcocho de guineo con pina recipe [Banana cake with pineapple recipe from the Dominican Republic]
Ingredients for the caramel sauce:
1 / 4 cup water
2 cups brown sugar
3 cups whipping cream
1 teaspoon vanilla
1 / 3 cup margarine
Bring water to boil with sugar, until it turns caramel color. Lower the heat and add the cream gradually, and vanilla, until blended well. Finally add the margarine and let cool.
Ingredients for the cake:
3/4 cup margarine at room temperature
1 1/2 cups sugar
3 eggs
2 1/4 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon powder
2/3 cup pineapple juice
1 1/4 cups mashed bananas
1/2 cup chopped nuts
Preparation of the cake:
Preheat oven to 350 degrees. In the mixing bowl cream the margarine and sugar until soft, add the eggs one at a time. In another bowl, sift flour with the dry ingredients. Stir together with a wooden spoon dry and add [alternating] pineapple juice and mashed banana, beginning and ending with flour. Finally, add the nuts.
Grease a baking sheet, 13" x 9" and add the mixture. Bake at 350 degrees for 1 hour or less. Let cool and invert.
Pour caramel sauce over cake and enjoy your delicious dessert.
